I have enough red and white oak oak to make the platform bed shown here http://plansnow.com/dn1116.html.  Do you think I can make the colors work by making everything but the panels in the headboard in red oak and the panels in white oak?  Any suggestions for stains that would accentuate the difference in colors between the wood?

I've used Minwax "Golden Oak" for such things over the years.    The Red Oak will take an extra coat of stain.    Just my $0.02 worth.

I used the same stain for the whole table.     The top is red oak, the rest is white oak.      The aprons were resawn to get the Quarter-sawn effect.     RedOak will take a lot more stain to get any colour to it.    White Oak will do with just a wash coat.
