making a butcher block out of hard maple, what is the be glue to use for this?
Butcher block (with endgrain showing) can be glued successfully with any PVA glue. I use Titebond III. Of course you don't want to run it through your dishwasher but it is more than adequate.
If you're laminating a cutting board (with long grain showing) I've also used PVA with no problem you could also use epoxy for an absolutely never break or split adhesive.
The key in both is to minimize the amount of moisture that is allowed to soak into the wood. I've had clients bring in a cutting board that looks all bleached out and has splits alont the glue lines. They;re wondering what they can do to fix it and I explain patiently that you cannot soak cutting boards in the sink or run them through the dishwasher and that likely we cannot "fix" their cutting board.
best of luck with y our project.
