Finishing spalted maple table

I'm building a spalted maple kitchen table.

How should I fill in the holes left by the bugs that left holes (and caused the spalting)?

How should I finish the table to keep the natural look?

 I have just completed 2 tables in spalted maple. One was finished natural , one darkened (a dramatic effect).

On both I used Waterlox and I really like the results. It doesn't yellow and the protection is great and no maintenance like waxing. The varnish in the waterlox will not completely fill the holes left by beetles.

If you go this route on a large table you may need to thin with about 10% mineral spirits to prevent lap marks.
